Healthy Breakfast Recipes

Berries are antioxidant powerhouses and a great addition to smoothies!

A problem many of us face each morning before we start our day is how to make a healthy breakfast. It is either because we do not have time for breakfast, or we lack ideas for healthy options. My focus is on a plant based diet, although I have mentioned in other posts that I do eat some wild caught oily fish from time to time for the omega 3 fatty acids. But, eating a mostly vegan diet doesn’t mean you have to sacrifice taste or a meal that is hearty. You can eat quick, healthy and satisfying meals that will help you maintain good health and vitality.

Life can be very intense at times, thus we have to ensure that we get the proper nutrition to remain effective and active. Breakfast is one of the most neglected meals of the day, but with some quick healthy breakfast ideas, you can consume a great breakfast without spending at lot of time. Start off your day properly by applying these ideas into your morning routine and keeping it simple.

A healthy breakfast will…

  • Stimulate the metabolism – eating breakfast accelerates the metabolism therefore, you burn calories rather than store them, which turns them into fat.
  • Strengthen the intake of nutrients – those who eat breakfast have a lower fat intake while fiber intake is higher with significantly higher levels of minerals and vitamins (most especially iron, calcium and magnesium). Consuming the proper nutrients will help you to keep from binge eating – your hunger is regulated properly and therefore fewer calories have will be consumed from the unhealthy foods.
  • Improve concentration and memory – those who eat a healthy breakfast have better focus, are more efficient, and maintain a better mood than those who skip eating breakfast.
  • Help you maintain a healthy weight – those who eat breakfast are likely to maintain a healthy weight.
Listed below are a few of healthy breakfast foods that are quick and simple:
Fruit Smoothies

Berries in a smoothie pack in the nutrition!

A balanced, easy to prepare morning meal. A great investment is a Magic Bullet blender. It can help you whip up healthy smoothies in convenient take-along cups for ultimate convenience. Take some fresh organic blueberries, strawberries, raspberries, half of a banana, sliced and mango. If fresh, organic is not available, opt for frozen. Eating organic berries is important as it will save you from consuming the pesticides that are present in conventionally grown berries.

Place all of the fruit in a large Magic Bullet container. Fill to the top with coconut water. Add a scoop of organic green barley powder for added nutrients. Process the smoothie on the Magic Bullet base until well blended. Use one of the closing tops and affix to the container once it is blended. You are ready to go!

Rice Cakes with Raw Almond Butter

Almond butter is packed with protein and nutrients.

Instead of dousing a toaster waffle or some other processed toaster cake in syrup or eating sugary cereals, rather cut the sugar intake and increase the fiber and protein by spreading a tablespoon of raw almond butter onto an organic brown rice cake. To sweeten, spread a dab of organic raw honey on top.
Almonds are packed with Vitamin E and are a good source of protein. Brown rice cakes are a great alternative to breads and baked goods. They are gluten free and lower in calories than their bread counterparts. This is a delicious, quick and nutritious breakfast!

Tofu Scramble

A tofu scramble is a delicious alternative to scrambled eggs.

Forget the eggs! This delicious healthy breakfast idea, a tofu scramble, will satisfy your hunger while providing high quality protein. Being vegan never tasted so good! Mash half a block of organic Non-GMO tofu, set aside.  Saute half of a chopped yellow onion in a tablespoon of coconut oil until translucent. Add sliced mushrooms, diced tomatoes, and whatever herbs and spices you are in the mood for. Saute it all up and add the tofu. Saute a few minutes more and it is ready.

Remember, with a healthy breakfast like this recipe, the sky is the limit as far as what you can add. Spice and season it up as you so desire. Add some minced olives and cumin for a Mediterranean flare. It is up to you!
