It’s important to me that I get my greens in one way or another every day. This Creamy Spinach Sauce is a quick and easy recipe that is delicious and satisfying. I was looking for a way to use the Violife Cream Cheese and spinach I had on hand and came up with this Creamy Spinach Sauce.
The addition of nutritional yeast provides a bit of a cheesy flavor. And, the vegetable broth adds flavor and thins out the cream cheese into more of a saucy mixture. These flavors work great together!
My preference for spaghetti is Jovial Gluten Free Brown Rice Spaghetti. But, you can use whatever pasta you prefer. If you prefer to serve this Creamy Spinach Sauce over brown rice, baked potato, or something different, it would work great in so many different applications. Go for it!
Ingredients Needed for Spaghetti with Creamy Spinach Sauce

1 small onion, chopped (or half of a large onion)
1 TBS coconut or olive oil for sautéing
1 container of Violife Cream Cheese (or vegan cream cheese of preference)
1 8 oz container of baby spinach
½ cup water
1 cup vegetable broth
1 teaspoon Arrowroot Starch
2 TBS Nutritional Yeast
2 12 oz boxes of Jovial Gluten Free Brown Rice Spaghetti (or spaghetti of preference)
How to Prepare Spaghetti with Creamy Spinach Sauce
Prepare the spaghetti while you are getting the Creamy Spinach Sauce ready.
Add the coconut or olive oil to a big pot and let it melt. Swirl it around to coat the bottom of the pot.
Add the chopped onion and sauté until it is translucent.
Add the ½ cup of water and then the spinach to the onions.
This will steam the spinach.
Mix the spinach around in the pot until it has wilted.
This should only take a few minutes
Add the Violife Cream Cheese to the spinach mixture and stir well until it has melted and is mixed in with the spinach mixture.
Add the arrowroot starch to the vegetable broth and mix well until the arrowroot is dissolved
Then add the nutritional yeast to the vegetable broth and mix to combine well
Add the vegetable broth mixture to the spinach mixture and mix well. Let it simmer on the stovetop for about 10 minutes until it has thickened a little bit then remove from heat.
Add the Creamy Spinach Sauce to the spaghetti and mix together until well combined.
Add spinach to the sauteing onions Mix well and add the Violife cream cheese. Once melted, add vegetable broth with arrowroot starch and nutritional yeast. Combine well and let simmer for about 10 minutes to thicken Combine with cooked spaghetti Get your fork! Mouthfuls of yum!
