Fool Me Once Crumbled Sausage and Peppers

Sausage and peppers

If you are a fan of sausage and peppers, this recipe is for you. The spices are right and the consistency is great. To have this more closely resemble meat sausage and peppers, I decided to crumble the tofu and it worked great. The nice thing about tofu is that it does not have much of a flavor on its own. What it does do is take on the flavor of whatever you cook it with.

I wanted to give this dish as authentic a sausage and peppers flavor as possible. I did my research and learned what makes sausage taste the way that it does. I put together a blend of about a dozen spices and made a marinade by adding some olive oil. I let the tofu sit for a couple of hours after it was mixed with the marinade and then sautéed it. Thanks to the sausage-y blend of spices, the tofu took on the taste and texture of crumbled sausage.

You can serve it by making a bowl with rice as the base and adding the peppers, onion and sausage crumbles. I especially like it served on a lavash so it is more of a sausage and pepper wrap. Yummy!

Ingredients Needed for Fool Me Once Crumbled Sausage and Peppers

Sausage and pepper seasonings

For Sausage
1 block extra firm tofu, crumbled
½ teaspoon sea salt
1 TBS paprika
1 teaspoon granulated garlic
½ teaspoon fennel seeds
½ teaspoon caraway seeds
1 teaspoon black pepper
¼ teaspoon red pepper flakes
1 teaspoon Italian seasoning
1 teaspoon parsley
½ teaspoon onion powder
¼ cup extra virgin olive oil

For Roasted Vegetables
2 red peppers – sliced and seeded
1 large yellow onion sliced into rings
Enough Olive oil for sprinkling over veggies
Sea salt, black pepper and granulated garlic for seasoning

How to Prepare Fooled Me Once Crumbled Sausage and Peppers

Preheat oven to 350 degrees

Combine the spices for sausage in a bowl and add the ¼ cup of olive oil
Mix well to combine and pour over tofu crumbles
Stir to well combine the tofu with the seasoning
Cover and set aside for about 2 hours

In the meantime, you can roast the veggies and prepare the rice, if you are making.

Put the red pepper slices in a big bowl and add enough olive oil to lightly coat each slice, adding only a small amount and mixing it well with the peppers to coat
Sprinkle on the sea salt, black pepper and granulated garlic seasonings to taste
Mix well to combine
Arrange the pepper slices on a parchment paper-lined baking sheet
Repeat this process with the onion slices and arrange on a separate parchment lined baking sheet
Place the veggies in the preheated oven and let roast for about 45 minutes

Once the tofu has had time to marinate, transfer it to a fry pan and cook over medium heat for about 10 minutes, stirring often to avoid the tofu from sticking to the pan

Once everything is cooked, arrange either on a wrap, lavash or hoagie roll (I used low gluten lavash) or over some rice and enjoy!
