Roasted Broccoli and Cauliflower with Garlic Sauce

This garlic sauce is reminiscent of a sauce you might find in a Chinese restaurant. But this one has very few ingredients and could not be easier to prepare. I make this garlic sauce often for those very reasons. I especially love it served over brown rice noodles. Happy Pho by Star Anise makes delicious brown rice noodles that are ready in just one minute. They have a light flavor that pairs well with roasted broccoli and cauliflower with garlic sauce served right over top of them.

While the noodles are super simple to prepare, you do have to be careful not to overcook them. They will turn into a sticky mess if you cook them for longer than the minute or two recommended. Plus, I have learned that if I add a splash of olive oil to the pot of water that I cook them in, it helps to prevent too much stickiness as well. The noodles have such a great flavor, that even though they are a bit sticky and a bit tricky to prep, they are worth the bother.

To prepare the roasted broccoli and cauliflower, use the recipe I have posted here. It will take you about 30 minutes to prepare the veggies including time to cut them up, season, and roast them. While they are roasting, you can get the garlic sauce ready and cook the noodles. It is a quick meal to prepare and your family will love it.

Ingredients Needed for Roasted Broccoli and Cauliflower with Garlic Sauce

4 large cloves garlic, sliced
1 TBS coconut oil for sauteing 
1 cup vegetable broth
2 tablespoon tamari
1 tablespoon arrowroot starch
1 tablespoon Yakon syrup
1 tablespoon sesame oil

How to Prepare Roasted Broccoli and Cauliflower with Garlic Sauce

Except for the sliced garlic and roasted veggies, mix all sauce ingredients together in a Nutribullet
Melt the coconut oil in a wok
Add the garlic slices and sauté for a couple of minutes until fragrant
Add blended sauce to the wok and stir for a minute until it starts to thicken
Add the roasted vegetables to the wok
Toss around the roasted broccoli and cauliflower in the wok to coat all of the vegetables
Serve over brown rice noodles or other gluten free pasta or rice of preference
