Sometimes you just don’t know what to make for dinner. I open the door to my refrigerator and scan the shelves waiting for ideas to pop out at me. And, sometimes, they just don’t! Potluck Pasta is always an easy go-to dish. And, with the myriad of gluten-free pasta options available now, it is always possible to mix it up and make a unique meal each and every time.
The staples for me when it comes to potluck pasta are simple. With my preferred brown rice pasta, I add some diced onion, a few cloves of garlic, some olive oil, sea salt and pepper as a base. Then, with whatever veggies I may have on hand, I create a delicious, nutrient dense meal that everyone in my family loves. And, the effort is truly minimal.
While the gluten-free pasta options are endless these days, I seem to have landed on brown rice pasta as my go to. Jovial is an excellent brand and they have tons of gluten free, brown rice options. Their taste and texture in my opinion is second to none.
Today, I had some leftover roasted broccoli, zucchini, chick peas, red pepper, mushroom, tomato. As it turns out, I happened to have a ton of veggies to add to this potluck pasta. You do not have to use this many! As little as one or two will make just as yummy a meal. If you only have tomatoes, a simple sauté of tomatoes with garlic and onion make a fantastic pasta topping.
Ingredients Needed for Potluck Pasta
2 12 ounce boxes of Jovial gluten-free pasta or your pasta of choice
½ onion, diced
4 cloves of garlic, sliced thin
Coconut oil for sauteing
Olive oil to taste
Sea salt to taste
Black pepper to taste
Veggies available in your fridge, sliced, diced, grated to your preference
How to Prepare Pot Luck Pasta
Ready your pasta pot by filling with water and salting
I like to pour a bit of olive oil into the pot of water. Brown rice pasta can be a bit sticky and this helps keep it from sticking together
While waiting for the water to boil, start sautéing your veggies
Melt a tablespoon of coconut oil in your skillet
Add the onion and saute until translucent
Add the garlic and sauté a couple minutes more
Add your veggies and sauté until they are tender, adding the harder veggies to the skillet first to cook a bit before adding the softer ones. The harder veggies take longer to cook. If you add everything at once, you may end up with mushy vegetables!
While sautéing, you may want to add a little water to the skillet (instead of more oil) to assist in cooking them to tenderness. This is the trick I use to ensure that I am not using too much oil in my cooking. I try to keep oil use to a minimum.
Add your seasonings to taste
After you cook and drain your pasta, add it to a large bowl and set aside until veggies are ready
When veggies are ready, add them to the pasta
Toss together to combine
Add a little olive oil to the pasta
Add some vegan parmesan, if desired
