Chocolate Chip Blondies

These Chocolate Chip Blondies are so easy to whip up when you feel like indulging in a treat. Best part about these is that they are guilt free! They are packed with protein and nutrients. And contain no refined sugar. They are sweetened with a little bit of low glycemic coconut sugar.

Since these Chocolate Chip Blondies are vegan, they contain no egg. To replace the egg, we are using a chia egg in this recipe. When you grind the chia seeds and add the water to them, a gel forms. Use this in place of an egg. If you don’t have chia, you can use ground flax seed. The same 1 tablespoon seed to 3 tablespoons water applies.

These chocolate chip blondies remind me of traditional chocolate chip cookies. I use Lilly’s Dark Chocolate Chips whenever I want chocolate chips for recipes. They are vegan, gluten free and contain no sugar. They add a rich, delicious flavor to the blondies.

1 tablespoon ground chia seeds
3 tablespoons water
½ cup ground oats
1 cup creamy almond butter
¼ cup creamy peanut butter
½ cup coconut sugar
1 teaspoon vanilla extract
½ teaspoon baking soda
Pinch of sea salt
¾ cup sugar free vegan chocolate chips

How to Prepare Chocolate Chip Blondies

Preheat the oven to 350F

Line a 8-inch square baking dish with parchment paper.
Combine the ground chia and water in a small bowl and set aside for a couple minutes so it can gel.
In a separate larger bowl, add in the almond butter, peanut butter, ground oats, coconut sugar, vanilla, baking soda and sea salt.
Mix by hand until well combined.
Add the chia egg
Fold in the dark chocolate chips.
Transfer the batter to the lined pan
Spread it evenly in the pan using the back of a spoon or spatula.
The batter will be thick so you may need to press it down you’re your hands to smooth it out.
Bake in the preheated oven until the top is lightly golden, about 20 minutes,
Let the blondies cool completely before cutting.
They may fall apart if they are cut when they are too warm.
