I think I could become a cookie monster if l let my guard down. Peanut Butter Chocolate Chip Cookies are such a two or three bite treat. If I am not careful, one cookie can quickly turn into 5 – down the hatch. Just. Like. That.

Luckily these Peanut Butter Chocolate Chip Cookies are filled with only goodness. They are vegan, gluten free and contain zero refined sugar. The chocolate chips that I use in this recipe are made by Lily’s. They have a short ingredient list and are sweetened with only Erythritol, a sugar alcohol (this article explains erythritol in detail).

These Peanut Butter Chocolate Chip Cookies are so easy to put together. You can whip up a batch in no time and you will enjoy every bite.

Ingredients needed for peanut butter chocolate chip cookies

1/2 cup coconut sugar
1 cup oat flour (rolled oats ground into flour)
1 cup almond flour (grind almonds into flour or use pre-ground almond flour)
1 teaspoon baking soda
1 tablespoon arrowroot powder
¾ cup peanut butter
½ cup Earth Balance vegan butter
1 tsp pure vanilla
¼ unsweetened apple sauce
1 TBS Yakon Syrup
1/4 cup vegan chocolate chips

How To Prepare Peanut Butter Chocolate Chip Cookies

In a medium bowl whisk together the almond flour, ground oat flour, coconut sugar, arrowroot and baking soda until all is well combined. Set aside

In a separate bowl, combine the wet ingredients
Using a hand mixer, cream together on medium speed until smooth
Slowly add the dry ingredients to the creamed mixture, mixing as you add
Add the chocolate chips and fold them into the mixture

On a parchment-lined cookie sheet, use about a tablespoon at a time to lay out the cookies. Flatten them down a little with a fork

Leave room between cookies for spreading

Bake for about 15 minutes until they look golden brown

Let cool slightly before removing from cookie sheet
