Makes 8 slices of pizza
Sometimes you just don’t feel like eating tomato sauce. I don’t know if it is just that I am getting older, but lately too much of the acid in tomatoes gives me heartburn. So, I came with a white pizza that fits all of my requirements: vegan, gluten-free, no refined sugar and packed with veggies!
The white sauce is simple to make and you don’t have to plan ahead. The ingredients are not complicated. Any vegan kitchen has these things on hand. For this Roasted Veggie White Pizza, I rummaged through my fridge and used some leftover roasted eggplant, red pepper and onion along with kalamata olives, halved grape tomatoes and leeks. The result – YUM! I may never eat pizza with tomato sauce again!
Ingredients Needed for Roasted Veggie White Pizza
White Sauce
1 cup raw cashews
3/4 cup vegetable broth
2 TBS Nutritional Yeast
1 clove garlic
1/2 Teaspoon dried Thyme
1/2 Teaspoon dried Rosemary
1/2 Teaspoon dried Sage
1 TBS Cashew Butter
One recipe for Gluten Free Pizza Crust
Roasted Eggplant
Roasted Red Pepper
Roasted Yellow Onion
Sliced Leeks (white part only)
Kalamata Olives, pitted and sliced
Or whatever veggies you have on hand!
Vegan Cheese (I like Violife, Miyokos or Daiya)
How to Prepare Roasted Veggie White Pizza
Preheat oven to 350 degrees
Roll out the pizza crust between two pieces of parchment paper on a pizza stone
To make the white sauce, combine all of the white sauce ingredients in a high-speed blender and blend until smooth
Spread the white sauce over the pizza crust evenly
Add the roasted eggplant slices, roasted red pepper and other veggies to the top of the white sauce
Sprinkle the vegan cheese on top
Bake Roasted Veggie White Pizza in the preheated oven for about 35 minutes
Vegan cheese should be melted and the crust should be slightly browned and hardened to touch
Cut into 8 slices with a pizza cutter
Add all ingredients for Cashew Cream Sauce to high speed blender and blend until smoothj Roll out pizza crust and smooth the white sauce evenly over the crust Add toppings! Any toppings you have on hand will work! Bake in 350 degree oven for 35 minutes Cut into 8 slices and yum!
