This Cauliflower Sweet Potato Gnocchi, as with all of my recipes, is vegan and gluten free. It is a simple, savory recipe that cooks up quickly and easily. I love it so much that I will sometimes make a double batch and freeze half of the gnocchi so I can throw a few in the air fryer frozen whenever I have a craving! You can try using the air fryer for the freshly prepared gnocchi too, just brush the gnocchi with melted Earth Balance instead of using a fry pan.
The rosemary and garlic add a nice flavor and make the house smell delicious. I have been using either Bob’s Red Mills gluten free flour or a new blend that I love is made by Flour Farm.
Ingredients Needed for Cauliflower Sweet Potato Gnocchi
2 cups cauliflower (fresh or frozen works)
1 medium sweet potato
2 cups gluten free flour
1 teaspoon sea salt
1 TBS dried rosemary
4 cloves of garlic, sliced
1-2 TBS Earth Balance
1 teaspoon capers (optional)
How to Prepare Cauliflower Sweet Potato Gnocchi
Boil the cauliflower in water until tender
Cube and peel the sweet potato and cook in a pot of water until tender (Sometimes I peel the sweet potato after it is cooked. The skin can be easily pulled away from the flesh of the potato once it is cooked)
Add the cooked sweet potato, cauliflower, gluten free flour and sea salt to the bowl of a food processor and process until a dough is formed
Remove the dough from the food processor and place it on a floured surface
Roll out the dough to a square about ½” thick
Slice the dough into 1” cubes
Press a fork into each cube creating an impression on the gnocchi

Remove dough from food processor 
Move onto a floured cutting board
and cut into 1” strips
Cut across the strips making cubes 
Press a fork over top over each gnocchi to
make an impression
Fry in melted Earth Balance
with sliced garlic
Yummy! 
Add rosemary and turn over 
Add capers at the end of cooking 
Serve!
In a medium fry pan, melt the Earth Balance and sauté the sliced garlic until it slightly browns
Add the gnocchi and cook for about 5 minutes until the down side is browned
Add the rosemary and sea salt to the pan
Flip the gnocchi over and cook for another 5 minutes
Remove from heat and sprinkle the capers on the cooked gnocchi, if desired
