This recipe for jackfruit clam sauce is so exciting for me! I am part Italian and have always loved my pasta. When I started to avoid gluten, I was concerned that I would miss pasta too much. And, one of my very favorite pasta dishes was spaghetti with clam sauce. But, honestly, now that I have found Jovial brown rice pasta, I am in love. It is light, delicious and does not leave you feeling like you ate a brick. And, best of all, it is free of gluten. I highly recommend the Jovial brand. They have some fantastic gluten free pasta options.

Finding an alternative to the clams took some contemplation. But, I have to say, jackfruit makes a great clam alternative in this jackfruit clam sauce. Make sure you use young, green jackfruit. The young jackfruit is not yet ripe. Once jackfruit ripens, it has a much sweeter flavor, which probably would not work in this recipe. The young jackfruit does not have much flavor. So, it will take on the flavors that it is prepared with. In this case, garlicy goodness with herbs and spices. Simply delicious. Ingredients Needed for Jackfruit Clam Sauce with Spaghetti

2 boxes Jovial Gluten Free Brown Rice Spaghetti
1 vegetable bouillon cube to add to pasta cooking water
1 cup of vegetable broth to add to the jackfruit clam sauce
1 can young green jackfruit
8-10 cloves garlic – cut into small chunks (I love garlic, for me, the more the better!)
1 TBS coconut oil to coat skillet
1 TBS Italian Seasoning
1 TBS Basil
1 TBS Oregano
1 TBS Dulse
1 teaspoon Rosemary
1 teaspoon parsley
¼ cup Extra virgin olive oil – split into 1/8 cup portions
Sea salt and black pepper to taste
1 TBS Earth Balance
Vegan parmesan for garnish

How to Prepare Jackfruit Clam Sauce with Spaghetti

Fill pasta pot with water. Add a quick pour of olive oil to the water to keep the pasta from clumping together
Add one vegetable bouillon to pasta cooking water for flavor

While waiting on pasta, prep the jackfruit clam sauce

Drain jackfruit and cut into bite sized pieces
Sauté garlic in coconut oil until slightly brown
Add the jackfruit to skillet and sauté for another 2-3 minutes
Add the vegetable broth
Mix to combine and sauté another 2 minutes
Add all seasonings and let simmer for about 7 minutes
Towards the end of the 7 minutes, add 1/8 cup of the olive oil to the skillet and mix into sauce

When pasta has finished cooking, drain and rinse well.
Pull apart any clumps that may have formed with strands of pasta sticking together
Return pasta to the pot and add the Earth Balance, mixing well with pasta to melt it
Add the jackfruit clam sauce to the pasta and the other 1/8 cup of the olive oil
Garnish with parmesan
