Spinach Sauce with Pasta

This is a vegan recipe that is absolutely delicious. It is packed with nutrition. The flavor and texture of a cheesy sauce is what makes it so appealing. Yet, it is completely dairy free and contains no animal products.

I make this for my family and even my very picky eaters love it. Serve it over the brown rice pasta of your choice and you have a meal that is filling and completely free of processed foods.

Ingredients:
  • 1 yellow onion – chopped
  • 2 cloves of garlic – chopped
  • Olive oil
  • 4 fresh ripe tomatoes – chopped (whatever type you prefer for cooking – I like tomatoes on the vine)
  • 2/3 cup of raw cashews
  • 2/3 cup nutritional yeast
  • 2 hearty handfuls of organic baby spinach
  • 1 ½ teaspoons Himalayan sea salt
  • Black pepper to taste
Method:
  • Process the cashews in a food processor until they have the consistency of a heavy flour.
  • Add to the cashews the nutritional yeast, salt and pepper and pulse to combine
  • Add the tomatoes and process until they are combined.
  • Add the spinach – pulse together until it reaches a saucy consistency
  • Separately, sauté the onions in the olive oil until they are slightly translucent (usually about 5 minutes or so)
  • Add the garlic to the onions after 5 minutes and stir to combine.
  • Cook for about 2 minutes more.
  • Add the spinach sauce to the onion and garlic mixture.
  • Stir to combine.
  • Heat together until warmed (do not overcook).
  • While the sauce is heating, stir it often.
  • Pour the sauce over cooked brown rice pasta.

To make this an even more appealing recipe, you can serve it with parmesan “cheese”. The simple recipe below is the vegan version of the otherwise fatty, dairy cheese. It has only 3 ingredients and takes only a couple of minutes to prepare. Use it with this spinach sauce pasta recipe and with any other recipe that you would typically enjoy parmesan cheese.

Serve with raw cashew parmesan “cheese”:

Ingredients:

  • 2 tbsp raw cashews
  • 1 clove garlic
  • sea salt to taste

Method:

  • Grind the cashews to a powder in a coffee grinder or food processor.
  • Add the sea salt and garlic.
  • Process until garlic is chopped up.

That’s it parmesan “cheese” – simple and easy to prepare. This is a great condiment to keep on hand. Store it in a shake jar in the refrigerator and use over pasta or anywhere else you enjoy parmesan cheese.
