When I started my vegan journey after my initial breast cancer diagnosis in 2009, there were very few options for cheese, meat substitutes and gluten free breads and pastas. Vegan Mexican Street Corn would have been impossible to make back in those days. The creaminess in the available cheese and mayo options would have left you longing for the original version. Fast forward to 2020! Now there are tons of options making vegan recipes like Mexican Street Corn so easy, creamy and delicious.
Vegan Cheeses in general have come a long way. Brands like Violife, Miyokos and Follow Your Heart, to name a few, offer great options that even melt, grate and stretch, which was missing in earlier versions of vegan cheese. The cheese I use for this recipe is made by Violife. They have several cheese options that have quickly become my favorites. For this application, I use their Just Like Feta. It has a tangy flavor that goes well with the lime juice found in this recipe.
Vegan Mayonnaise has also evolved. My favorite vegan mayonnaise is Follow your Heart. They have several different options to choose from and in my opinion it is creamy and delicious. I don’t miss the dairy in the least.
Corn on the cob is one of those staple vegetables. So perfect for a summer cookout. Corn in its unprocessed state has a lot of nutritional value. It is when it is processed into oils, high fructose corn syrup and genetically modified when it loses its goodness and can actually spike our blood sugar as well as lead to some health issues if too much is consumed. Eaten in its natural form and in moderation, corn has lots of nutrients. It is also important to try to find organic corn if at all possible. Organic corn is not always easy to find. This is an easy Vegan Mexican Street Corn Recipe that is quick to make. You can cook the corn to your liking. Grilled corn on the cob will lend a smokier flavor, which is really nice. But, if you are not grilling, this Vegan Mexican Street Corn is still very tasty if you are using boiled corn instead.
Ingredients Needed for Vegan Mexican Street Corn
- 4-6 ears of corn, cooked
- ½ vegan mayonnaise
- ½ block Viola Life Vegan Feta cheese, cubed
- 1 teaspoon cilantro
- 1 clove garlic, minced
- 1/4 teaspoon ground chipotle pepper, to taste
- 2 teaspoons finely grated lime zest
- 2 TBS lime juice
How to Prepare Vegan Mexican Street Corn
- In a very small bowl, mix the chipotle pepper and lime zest together, set aside
- In a magic bullet or blender, pulse the mayonnaise and cheese together
- Add the garlic to the container and pulse again to combine
- Add the lime juice to the container and pulse to mix together well
- Remove the mixture from the magic bullet or blender
- Spread mixture on corn and sprinkle with remaining seasonings
- The result? A limey, spicy, delicious side dish.
