This is a savory, satisfying recipe that will leave you satiated and powered up by the nutrition you will be gaining from the ultra clean ingredients you will be using to prepare Spinach Artichoke Quiche.

Ingredients Needed for Spinach Artichoke Quiche

Ingredients for spinach artichoke quiche

1 TBS coconut oil
1 onion, diced
6 cloves garlic, minced
1 TBS Earth Balance or other vegan butter
16 oz baby spinach
1 jar artichoke hearts, drained and diced
16 oz silken tofu
2 teaspoon sea salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 TBS nutritional yeast
1 TBS tahini
1 TBS white miso
1 teaspoon dried basil

How to Prepare Spinach Artichoke Quiche

Preheat oven to 350 degrees

In a large skillet on medium heat, add the coconut oil and let it melt down
Add the diced onion and sauté until the onion is soft and translucent.
Add ¼ cup of water to the onion if the pan gets too dry. Keep adding more water ¼ cup at a time if necessary. This will reduce the amount of oil that you need to add.
Add the garlic to the pan and sauté a couple of minutes more
Add the Earth Balance and let it melt down
Add the artichoke hearts to the pan and combine well
Remove the skillet from the heat and set aside while you prepare the creamy part of the quiche

In a food processor, spoon out the silken tofu into the food processor bowl
Add the sea salt, black pepper, garlic powder, onion powder, nutritional yeast, tahini, white miso, dried basil
Process until you have a smooth, creamy mixture
Add the mixture to the spinach artichoke mixture and mix well until well combined

Press out your sage pie crust into an 8” pie pan

Add the quiche mixture to the pie crust and smooth it out
Bake at 350 degrees for 60 minutes
Let sit for about 10 minutes out of the oven before cutting
Enjoy with a salad or other yummy vegetables!
