This is another soul food recipe that warms my heart whenever I make it. My grandmother had magic in her hands. Whatever she cooked, was full of flavor and full of love. A simple recipe like Spinach and Rice may seem hum drum, but the spices in this recipe make it come to life.

My grandmother used lots of great aromatic spices when she cooked. Cinnamon was one of her favorites. And, is it any wonder that she and my grandfather lived to ripe old ages. My grandmother was with us until she was 102! Cinnamon is full of antioxidants and other health benefits. This article outlines some of the amazing benefits it offers. Ingredients Needed for Spinach and Rice

Ingreidents for spinach and rice

2 cups Jasmine brown rice
5 cups vegetable broth
1 TBS Coconut Oil
½ yellow onion, diced
1 TBS Earth Balance vegan margarine
1 package baby spinach
Juice of one lemon
½ teaspoon cinnamon
½ teaspoon ground cumin
1 teaspoon dried mint
1 teaspoon granulated garlic
Sea Salt and Black pepper to taste

How to Prepare Spinach and Rice

Cook the rice in the vegetable broth according to package instructions
Melt the coconut oil in a large pan
Add the onion and sauté until soft and translucent, adding some water to the pan if it becomes dry
Once the onion has begun to soften, add the Earth Balance to the pan and saute until melted
Add the spinach to the pan and stir to combine
Add the cinnamon, cumin, mint, garlic and sea salt and black pepper
Stir well to combine everything cooking until the spinach has shrink down and wilted
Remove from heat and add the brown rice to the spinach mixture
Stir well until everything is combined
Serve and Enjoy!
