If you want to avoid pesticides when preparing this gluten free blueberry crisp, it is important to choose organic blueberries if possible. Berries in general are included on the Environmental Working Groups Dirty Dozen list. The Dirty Dozen are the most important foods that should be consumed organic. The topping part of this Gluten Free Blueberry Crisp Recipe makes enough for a light crumble on the blueberry crisp. If you prefer a heavier crumble on your crisp, simply double the recipe and the crumble will be much more generous. It is all personal preference. The crisp is ready in a jiffy too. You can put it in the oven right after dinner as it is ready in a mere 20-25 minutes. When the crumble is a bit golden and the blueberries are just starting to melt apart but are not mush, it is ready. Beware though, if you leave the crisp in the oven for much longer than the 25 minutes recommended, it will melt into more of a jam. It will still taste good, but will not be the desired consistency that makes it so very mouth watering! And, adding a couple of dollops of vanilla (or your favorite flavor) vegan ice cream (Nada Moo is fantastic) when it is still warm. Heaven on earth!
Filling Ingredients for Gluten Free Blueberry Crisp
- 2 pints organic blueberries
- 3 tablespoon agave
- 1/2 a fresh lemon
- ¼ cup water
- 1 tablespoon arrowroot powder
Topping Ingredients for Gluten Free Blueberry Crisp
- 1 cup blanched almond flour
- ¼ teaspoon celtic sea salt
- 1 teaspoon cinnamon
- 1 tablespoon vanilla extract
- 1 tablespoon coconut oil
- 1 tablespoon agave
Preheat oven to 350 degrees
Mix blueberries, sweetener and lemon juice together
In a separate bowl, stir together water and arrowroot powder then mix with the blueberries
In a medium bowl, combine almond flour, salt and cinnamon
In a smaller bowl combine vanilla, coconut oil and agave
Stir wet ingredients into dry
You will create a crumbly topping mixture
Sprinkle the topping over apple mixture
Bake covered at 350° for 20 minutes, until blueberries soft and start to open and topping is golden brown
Serve while warm. Add a couple of scoops of your favorite dairy free ice cream for a guilt-free treat. Try Nada Moo Vanilla. That is our fav!
