Summertime is the perfect time for light, easy to prepare foods. Who wants to slave over a hot stove when the temperatures are sizzling? Not me! Tofu is a very versatile food and is the base for this Eggless Salad recipe. I always choose the organic, non-gmo version to ensure I am getting the quality tofu for my recipes. These days it is difficult to find tofu that is completely non-gmo. Cross contamination happens when our farms are near one another and one farm is growing organic and the other is not. The wind can carry pesticides from the conventional farm to contaminate the organic farm. You have to know your brands. Having no distinctive flavor of its own, tofu is an empty canvas. You can really spice it up with any flavors you enjoy making the perfect blend for you as it takes on the flavor of the seasonings it is prepared with. This recipe offers all the flexibility in the world. You can veer off of my recipe and create your own preferred flavors and tastes. You really can’t go wrong. The recipe I am offering here is the result of tons of different variations coming to fruition. Narrowing down, adding, subtracting and viola! Here we are.
You can eat this eggless salad on its own, over a green salad or served on a sandwich with your own favorite gluten-free bread option. I like Simple Kneads bread. They offer several varieties that are vegan and gluten free. I have not tried every variety, but the ones I have consumed taste great and have a nice texture. But, read the labels. Most commercial brands may skip refined sugars, but they do contain dextrose, agave or some other forms of added sugar. Another great brand is Food For Life. They have been making Ezekiel Bread, which is a fantastic sprouted grain bread, for a long time. They now offer a vegan, gluten free variety which is long overdue. It does contain agave, but no refined sugars and their other ingredients are fantastic. Always limit your sugars no matter what form they take and whether they are refined or not. To avoid sugar in all forms, go homemade! That way you can control exactly what your bread contains. Of course, not everyone has time to make homemade bread, so these other brands are a great alternative in limited amounts.
Ingredients Needed for Eggless Salad
- 15.5 package of organic, non-gmo tofu
- ¾ cup Vegan mayo
- ¼ cup diced yellow onion
- 1 grated carrot
- ¼ cup chopped fresh parsley
- 2 scallion green onions (white parts only) chopped
- 3 TBS nutritional yeast
- 1 TBS Dijon mustard
- 5 sliced kalamata olives
- 2 tsp turmeric
- 1 tsp tarragon
- 1 tsp dill weed
- 1 TBS dill relish
- ¼ tsp red pepper flakes
- ½ tsp garlic powder
- ½ tsp sea salt
- ½ tsp black pepper
How to Prepare Eggless Salad
Mash tofu with a potato masher until it is crumbled. You can also crumble by hand if you prefer.
Add the remaining ingredients and mix well.
Serve on its own, over a salad or on a sandwich with your gluten free bread of choice.
