Chai Oatmeal Chia Pudding

This chai oatmeal chia pudding is such a simple recipe! With only six ingredients, it is just a matter of mixing together and letting it gel in the refrigerator. If you prepare it in the evening before bed, it will be ready to go for breakfast in the morning. We always add berries to it, which adds not only great berry flavor, but the nutrients and antioxidants the berries contain. It’s a win-win all around!

Another great aspect of this oatmeal chia pudding is that it is really really versatile. You can combine it with just about anything to make it an overnight oats breakfast. For example, add some cut up apple and cinnamon to make an apple cinnamon oatmeal chia pudding. You can add a tablespoon of cacao powder to create a chocolate version. This chai version has a nice spice to it. If you prefer a milder taste, leave out the chai spices and make it with just the vanilla extract and yakon syrup. The possibilities are truly endless and are open to your creative prowess.

Ingredients Needed for Chai Oatmeal Chia Pudding

  • 1/3 cup of organic chia seeds
  • 1/3 cup Bob’s Red Mills organic rolled oats (or oats of choice)
  • 2 TBS pure yakon syrup
  • 1 TBS pure vanilla extract
  • 2 teaspoons pumpkin pie spice or Chai spice blend (recipe here:
  • 1 can of organic coconut milk

How to Prepare Chai Oatmeal Chia Pudding

  • In a medium sized bowl, mix all of the ingredients together with a spoon or baking spatula until well combined
  • Cover and put in the refrigerator for a at least an hour or overnight to enjoy for breakfast in the morning

When serving, add some of your favorite organic berries or toppings of choice. Keep it healthy by not adding sugars or refined foods!
