I love these gluten-free, no refined sugar, vegan almond crescent cookies! They never last long in my kitchen! They are so simple yet they hit the spot when I am seeking something sweet. They satisfy my desire for an indulgence without having to indulge. There is zero sugar in this recipe. Doing a happy dance yet?

Almonds naturally have a hint of sweetness. To capture that flavor and build on it, I use yakon syrup to further sweeten these cookies. Yakon syrup is low glycemic and high in fiber. This article describes some benefits gained from yakon syrup as an alternative to refined sugar.

Ingredients Needed for Almond Crescent Cookies

Ingredients for almond crescent cookies

1 cup finely ground almond flour
3 Tablespoons Earth Balance or other vegan butter, melted
1 TBS yakon syrup
1/2 teaspoon pure vanilla extract
½ teaspoon pure almond extract
Pinch of sea salt
1/3 cup finely chopped pecans
1/8 cup Lakanto Sugar Free Powdered Monkfruit Sweetener

How to Prepare Almond Crescent Cookies

Preheat the oven to 325°F.
Line a cookie sheet with parchment paper
Mix together the almond flour, melted Earth Balance, yakon syrup, vanilla extract, almond extract, pinch of sea salt and pecans in a small bowl. A wet dough will form.
Wet your hands with clean, warm water. Take about a tablespoon of dough at a time and form the dough into small crescent shapes.
Lay the crescents on the parchment paper lined cookie sheet. These cookies will spread a little bit so be to leave some space between crescent cookies
Bake in the preheated oven for about 20 minutes or until they are a light golden brown on top
Remove from the oven and let cool completely
Once cooled, sift the Lakanto Sugar Free Powdered Monkfruit Sweetener over them
Store the cookies in the refrigerator to keep them crispy and fresh. When I make these, they usually do not last long enough for this last step!
