These are versatile milks that are a great replacement for cow’s milk. We use them in cereal, coffee and in recipes that call for milk. They are both delicious, nutritious and simple to make right in your own kitchen.

Recipe for Raw Almond Milk

Almonds are low in saturated fat. They contain many protective nutrients such as calcium, magnesium, vitamin E and compounds called phytochemicals. These nutrients are said to protect against cardiovascular disease and some types of cancer. Almonds have also been shown to have a favorable effect on lowering blood cholesterol.

This recipe makes a quart that will keep in the refrigerator for 4-5 days. Use in smoothies or anywhere else you would use milk.

Ingredients:

  • 1 cup of raw almonds (soaked overnight in purified water)
  • 4 cups of purified water
  • ¼ cup of agave nectar
  • Pinch of sea salt

Method:

Rinse the almonds and place them in a powerful blender. Add the remaining ingredients and blend until smooth. Pour the almond milk through a nut bag to filter out any chunks of almond to make the milk smooth. The residue can be used in other recipes that call for almond meat.

Recipe for Raw Cashew Milk

Cashew milk is delicious and creamy. Like almond milk it is versatile and a great replacement for cow’s milk. It can be used just about anywhere you would use cow’s milk in healthy recipes as an alternative to dairy.  Cashews are lower in fat content than most other nuts. The good news is that  approximately 75% of their fat is unsaturated. They contain the same heart-healthy monounsaturated fat that is found in olive oil.

You don’t need to soak the nuts for as long so it is a more practical recipe if you are looking to make something that is more spur of the moment. Making the milk and keeping it on hand will ensure that it is readily available for use. This recipe makes one quart of fresh, creamy cashew milk that will keep in the refrigerator for 4-5 days.

Ingredients:

  • 1 cup of raw cashews (soaked for about an hour in purified water)
  • 4 cups of purified water
  • ¼ cup of agave nectar
  • Pinch of sea salt

Method:

Rinse the cashews and place them in a powerful blender. Add the remaining ingredients and blend until smooth.
